Blog. ‘DREAM-TEAM’ COOKED UP A STORM IN LIVERPOOL

A ‘dream team’ of celebrity chefs from the North’s finest restaurants cooked up a storm for a fundraising dinner at Liverpool Hilton Hotel in October 2019 in aid of Hospitality Action and raised a record £30,500 for our industry’s less fortunate.

Our thanks go to chef Paul Askew, Fellow and Chairman in the North of England for the Royal Academy of Culinary Arts and Chef Patron of the multi award winning Art School Restaurant for putting together the chefs line up, for hosting the evening, for linking the kitchen with the guests and for conducting the live auction.

The guests were treated to a Champagne and Gin & Tonic reception, kindly sponsored by Halewood Wines and Liberty Wines and guests enjoyed a fabulous 5 course award winning menu, with exclusive live feeds and interviews with the chefs from the kitchen throughout the evening.

With thanks to chef Oli Martin, Hipping Hall, Lancashire holder of 4 AA Rosettes for delivering an absolutely beautiful Starter; Beetroot, Fermented Blackcurrant, Magnolia and Rose Juice with Perilla Oil.

To chef Ellis Barrie, 2017’s finalist of BBC's Great British Menu from the Marram Grass, Anglesey holders of 2 AA Rosettes for treating us to a tasty super Fish Course; Anglesey crab, apple and celeriac with pork crackling, pork and crab reduction, crispy leek.

To chef Adam Reid, Adam Reid at The French, Manchester holder of 4 AA Rosettes, 2019’s Main Course winner of BBC's Great British Menu for recreating his exclusive dish, an unique sharing experience; Comfort Food ‘Sounds Good’ Organic Rhug Estate chicken with a barley, sweetcorn and turnip stew.

To chef Simon Shaw, El Gato Negro, Manchester and Liverpool. Michelin ‘Bib Gourmand’ holder in 2019 for a third consecutive year, the only ‘Bib Gourmand’ holder in Manchester for rolling out a finger licking Cheese Course; Panko coated Monte Enebro goat’s cheese with Orange blossom honey.

To chef Tom Parker, Chef of the Year, Great British Pub Awards 2019 from the White Swan at Fence, Lancashire for completing the evening’s culinary experience with a delicious Desert; ‘Tiramisu’ Banana Ice cream, Michel Cluizel chocolate, chicory and coffee caramel.

A huge thanks to the Hilton team. To Marcus Magee, General Manager for the warm hospitality and support, Executive Chef Kieran Maxwell for sharing his kitchen and for the wonderful Canapés and Petit Fours, the Events Team for their solid support throughout, the Conference and Banqueting team who looked after us on the night and Tamzyn Angela Events for dressing the tables and the room. Your support was amazing!

Thanks to Sarah Donoher, Head Sommelier at The Art School Restaurant in Liverpool and Filippo Zito, Deputy Manager and Sommelier at Tast Catala, Manchester for sharing their wine knowledge and for introducing the tasting notes of the paired drinks for each dish.

We hope your winning lots made you happy and we want you to know that the money you put in the pot will directly help colleagues and their families get their lives back on track.

Every day in the office we answer calls for help. I know that if our beneficiaries had the opportunity to thank you personally, they would. Extending a helping hand to a fellow from the industry as a humble act of kindness goes such a long way and your support directly changes people’s lives. The effort you made on the night transcends to a moment that truly turns lives around.

To everyone involved and to all our guests, we thank you! As a charity we couldn’t do our work without your support. We can assure you that every penny you raised will be spent very wisely.

The Northern Lights Dinner was a wonderful evening of celebration of some of our industry’s best.
