Wiltons restaurant on Jermyn Street started life as an oyster stall in Haymarket in 1742 and today, it is still renowned for its oysters. For the past 14 years oyster master, Tommaso Sicuro has been shucking molluscs on which this bastion of classic dining became famous. With his expert skill, he ensures that every oyster is opened safely at its hinge by twisting and levering up the shell with a knife to reveal the delicate meat inside. Tommaso’s level of dedication to his work is matched by his love of cycling. Wiltons is delighted to support his participation in the celebrated Paris-Brest-Paris long-distance bike ride, covering 1,200km, taking place in August– all to raise money for the charity, Hospitality Action.
It was during the shutdown of the Covid pandemic that Tommaso’s passion for cycling became evident. Wiltons was closed and taking up a new challenge was critical to staying physically fit and mentally healthy. Wiltons is committed to supporting his epic bid to raise a sum of £25,000 for the charity Hospitality Action.
Why did you choose Hospitality Action as the dedicated charity?
“I wanted to do this because Hospitality Action is for everybody who works in this business,” said Tommaso. “I wanted to contribute. I have never done anything like this before and when I am on the bike, I feel free and it reminds me of those that for whatever reason feel trapped, Hospitality Action can offer help and assistance.”
“From chefs to waiters to housekeepers and managers, receptionists and kitchen porters, sommeliers to bartenders, the charity is there to give advice and support. Whether you’ve got financial problems, physical illnesses or mental health issues Hospitality Action helps people get back on their feet.”
Director Jason Phillips reveals how proud Wiltons is to support one of its long-serving staff. “It’s a unique opportunity for Wiltons to demonstrate how important everybody who works in all aspects of the hospitality is to our continuing success,” he commented.
“Many of our guests, from those who live and work in the UK to those outside the country, will have the chance to contribute to Tommaso’s fundraising efforts. The ride is a real endurance test and a tribute to Tommaso’s love of both cycling and his determination to help his fellow hospitality workers.”
How long is the route?
“The route is about 750 miles or 1,200 km long and takes place from August 20th to the 24th. The event takes place every four years, and this is its 20th year. I will begin at Rambouillet just to the south-west of Paris and will cycle for approximately 90 hours in just four days and will arrive at Brest on the coast of Brittany, and will then cycle back to Paris.”
How are you preparing mentally and physically?
“I have a small group of friends coming who I ride with every weekend, you can lose your motivation, strength, and determination on a long and challenging ride, however, their support will be instrumental in my success.
There will be a series of checkpoints along the way and your card will be stamped at each, which will confirm the completion of each stage. Along the route, there will be designated rest stops.
To illustrate Wiltons’ support, I will be wearing a cycling jersey with the Wiltons logo, complete with an oyster on the back. This will showcase the restaurant itself and bring awareness of the charity Hospitality action.”

“I originate from Lecce in Puglia in southern Italy and have been working at Wiltons for 14 years. Everybody within the company and its patrons, have been very enthusiastic and encouraged me to do this and I am grateful for all the support Wiltons has given me. “
On the road - what lies ahead
“It is imperative that you move around a little on the bike as you cannot sit for hours at a time in a saddle because it affects your muscles. I will need to prepare for a variety of weather conditions – it may be 30 degrees during the day and down around 4 degrees at night and I will need a little bag to carry warmer clothes on the back of the bike as well as repair kit. I am very much looking forward to completing the challenge. Knowing I have the support of Wiltons and that I will be raising money for Hospitality Action will keep me motivated! I have a real love for cycling, it makes me happy, and helping such a worthwhile cause by cycling gives me the additional motivation to get me through the tougher times!”
